600g potatoes, peeled
150g bacon, chopped
100ml warm milk
1 onion, finely chopped
1 egg, beaten
1 teaspoon Mediterranean spice mix
Pinch of salt
Dash of ground black pepper
2 tablespoons grated cheese
Oil for frying
Tablespoon butter for greasing
Preheat oven to 180 C. Grate the potatoes and drain the excess liquid through thin fabric. Fry the bacon and half of the onion in a skillet. Add the remaining onions to the potatoes, add milk, egg, bacon and spices. Stir thoroughly. Butter the baking dish. Pour the potato mix in the dish and cover in tin foil. Bake for 40 minutes. Remove the foil, crank the heat to 210 C. Top with cheese and bake for 5 to 10 minutes.
